Dates

The smell of dates in perfume is usually reconstructed as an accord because the fruit is not a standard source of fragrant essential oil. Perfumers build a dense dried-fruit effect with sweet, balsamic, honeyed and sometimes spicy materials. It typically smells sticky dried fruit, honey, caramel, warm sweetness and soft spice. It usually appears in the heart and base, adding rich gourmand sweetness and a Middle Eastern dessert-like character. Dates smell darker and more syrupy than fresh-fruit notes such as pear or apple.
